In terms of what ratio gelato makes to espresso, a traditional affogato is prepared with two cups of gelato and 1 shot espresso. But when you're making it at home the ratio can be adjusted and easily adjusted based on who you're serving. In my time as a kid, the ratio of gelato with espresso was a bit (ok quite a bit) higher, however watching my grandma pour hot espresso over the chilled gelato, however small her pour could have made me want to drink it all the time.

Is the espresso for an Affogato Particularly Brew?

If you're making an Affogato then you must ensure that the espresso you choose to use is strong enough to drink on its own. The espresso used in an Affogato must be rich and strong.
