In my previous article, we looked at the essential tools that a butcher needs to run his business. In that article, I just touched on the vacuum pack machine as my seventh point but I want to expand on this essential butcher's tool. I think that this is a machine that is underestimated and I would like to take a further look at the uses, benefits and the power that this piece of equipment can provide.

It is also bigger with a deeper inner chamber which allows for more meat to be packed inside. Thus more meat can be packaged in one pack. Now let's take a look at the power that is available in a vacuum pack machine, especially one that is used in butcheries. Butcheries work with a heavier food product, i.e. meat. That means that meat requires a larger vacuum pack machine with more power in order for a butchery to run efficiently. A butcher requires a machine that has at least 1.2kw of power because it needs to be able handle consistent usage and heavier loads when packaging the meat.

It also requires a powerful vacuum pump. After all, that is the main purpose of this piece of equipment: to draw out all the air before sealing the pack and keeping the freshness inside. A butcher that considers obtaining this type of butchery equipment needs to look at the power of the vacuum pump. A butcher needs to ensure that the machine has a vacuum pump of about 25m³ to 60m³. This will allow for much more air to be drawn out within a shorter period of time and your machine will be able to handle the pressure.

The benefits of the vacuum pack machine are twofold. The vacuum action ensures that air is drawn out of the pack which increases the hygiene factor. Combined with the sealing action, it ensures longer freshness of the meat. Once packaged the meat can be frozen and stored for a longer period.
